Raisin/Fig syrup

  • 150g dried figs, torn in half
  • 250g raisins
  • 12 cardamom pods
  • 1L water
  • 200g Sugar (not added initially)

Weigh the pot at this point, then bring to a boil and then drop the heat to a simmer until half the water is gone. Then strain.

Add water if needed to get the volume to 500g, add 200g sugar. Simmer until sugar is dissolved
